Knowledge about fauna/plants
What skill would knowledge about animals and plants fall under? For instance if a particular kind of boar did something to show that it was going to charge or what a plant feels like?

There's more than one skill that might fall under, depending on particulars.
Either one of those could fall under Field craft (assuming the plant in question is a wild plant rather than a cultivar).
For domesticated plants it would probably fall under Gardening.
Wild animal behavior could also fall under Hunting.
Also, if the traits in question aren't readily noticed, Detection would play a role in your ability to spot them.
The closest to a one stop shop for that sort of thing? Field craft.
