Welcome to Standing Trials
Mixed races are quite popular here, and people, especially staff, are far less precious about it as long as you work with the provided lore. I find you either love or hate magic, and if you enjoy it, there is plenty to work with here, alternatively, I've managed to play a very longstanding character without using a ounce of magic. I've not run into any characters yet who haven't played by their strengths, but in saying that, I've also never had my character run into a Mage (possibly because there aren't very many).
It doesn't matter where you go online, there will always be that young RPer just finding his feet and using amnesia while he builds the confidence to create bigger and more elaborate backstories with experience, or the grinder who wants all legendary skills, immortal marks, and magics. The great thing about ST, I've found, is that there are individuals at every level playing together and supporting each other really well. You sound like the kind of person who knows what they like, so I'm sure you'll soon discover what works for you here and who you work with best.
My advice would be to read around, see what inspires you, and go from there.

A fantasy site without an abundance of mages - that sounds refreshing already.
I do get what you're saying about people gravitating around their comfort zones. I never saw it quite like that. In my mind, it's usually one of two things - emulation of some very famous and well established fantasy character or you have no actual idea what you'd like to play, but playing itself sounds fun - so you'll decide later. These latter cases are like those new players to your DnD session who have no clue what is going on, but they play along nicely and are having fun. People like that are usually along more for the company than the game itself - that does not make them bad players - it just makes for strange character interaction. This has been my experience with these things almost universally.
And amnesia helps both types of people achieve the same desired result equally quickly. It's completely understandable. Amnesia can be a mechanically solid plot device for people who know exactly what actually happened, but want their characters clueless. For some reason it creates a better story, in your mind, if your character can't recall something or anything. I don't personally see the appeal even when it's done very well, as it feels overly represented - but like everything there are both pros and cons.

I'm enjoying how much you're engaging with the community already upon arrival -- it's a good sign! I don't have any real insights to offer off the top of my head (since I'm newly awake and also newly re-emerged) but nonetheless I hope you find things you like here. Quite a few of us have trailed in from Mizahar in the past, while not all of us were there for quite as long, and this place has definitely been good to most of us for a variety of reasons. Different flavours, different communities.
